Color and smell are the best way to tell. Good color usually means ripeness. Resist the urge to squeeze, it can cause bruising.

• Ice cold water for leafy greens. Instead of letting the water wash over them. Fill a large bowl and plunge the greens, allowing debris to fall to the bottom and then lift the greens out. Can do multiple times.
• Wash berries in a colander and run under cold water. Then transfer to a cookie sheet with paper towel. Once dry, put them back in a container and let them sit out on the countertop.
• Keep a designated scrub brush for root vegetables like carrots, potatoes etc. to use while you wash
them.
• Brush mushrooms with a paper towel or a pastry brush, do not wash.

1. Dehydrate. You don’t need a special machine, lowest setting on your oven works well. Use dry
fruit in baked goods and cookies. Grind to make spices or supplements. Tomato powder is
excellent in meatballs and on chicken. Try zucchini chips dipped in parmesan dressing.
2. Pickle. Even if you’re not into canning, a quick pickle vegetable will last a few months in the refrigerator. Make a compound butter or sofrito.
3. Puree butter with herbs and save in the freezer. Use to baste steak or top grilled vegetables. Chop onion, garlic, peppers and tomatoes and cook down together…way down, then save to cook into your rice.
