Brussels Sprouts
4 oz bacon, diced
1 lb. Brussels sprouts, halved
2 Tbsp. cooking oil, as needed
4 oz Chef Alyssa’s Kitchen Champagne Tomato Jam
Fresh thyme leaves for garnish
- In a large sauté pan over medium-high heat, render the bacon. Once crisp, remove with a slotted spoon, leaving the fat in the pan.
- Place the halved Brussels sprouts flat-side down in the pan and cook until caramelized. Remove onto a tray and sprinkle with salt and pepper. Do this in batches if they will all not fit in an even layer in the pan and use additional cooking oil, as needed.
- Serve Brussels sprouts drizzled with the tomato jam and garnished with crispy bacon and thyme.
